Vanilla Ice Cream Sandwiches

If you are looking for something fun and tasty to create with your kids this summer, try making some ice cream sandwiches!  Purchase or make a variety of your favorite cookies and get your favorite vanilla ice cream.  Scoop several tablespoons of ice cream into a bowl and allow it to soften slightly.  Then spread the ice cream onto the bottom of a cookie and place another cookie bottom side on the ice cream.  Wrap the cookie sandwich in wax paper and place in freezer for about 15 minutes to allow the ice cream to harden.  Let your kids get creative with their cookie combinations! Our favorite cookie is the Coffee Chocolate Chip:

1 cup salted butter, softened

1 cup white sugar

1 cup brown sugar

2 eggs

1 tsp Villa Vainilla vanilla extract

3 cups all-purpose flour

1 tsp baking soda

1 cup semi-sweet chocolate chips

1 cup dark chocolate chips

1/3 cup instant coffee granules

Preheat oven to 350 degrees.  Combine all dry ingredients (except chocolate chips), then add one stick of butter at a time- using a mixer.  Add eggs and vanilla to mixture.  Once thoroughly combined, dough should have consistency of play-dough.  Add chocolate chips using a spoon to mix.  Roll into a cylinder with about 3-inch diameter.  Slice dough roll every half inch and place slices onto a cookie sheet. Bake about 8 minutes or until edges are slightly brown.
