Villa Vainilla Healtly Oatmeal Cookies

Time to begin baking again with this healthy oatmeal cookies recipe.

3 cups whole oats

1 cup all-purpose flour

2 large eggs

¾ cup unsalted butter at room temperature

½ cup sliced almonds

1/3 cup light sugar

1/3 cup brown sugar

1 tsp baking powder

½ tsp salt

2 tsp Villa Vainilla Mexican Vanilla Extract

 

Preheat oven to 350°F.

Process 1 cup of oats in a food processor until finely grind. In a medium bowl mix together the flour, whole and ground oats, baking powder, and salt.

In a mixer, with the paddle attachment, cream the butter and sugars until light and fluffy, about 2 minutes. Mix in the eggs, one at a time, and add the vanilla (you can add an extra teaspoon for a richer vanilla flavor!)

Put the mixer in low speed and add the dry ingredients. Add the sliced almonds and fold until evenly distributed. If you want you can add or replace with raisins, cranberries or pecans.

Drop tablespoons of dough in a greased baking sheet (2 in. apart). Bake for 10 minutes and let them cool. Remove with a spatula to a wire rack.
