Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1 teaspoon vanilla bean seeds
  • 1/2 cup sour cream, room temperature
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions:

  1. Preheat oven and prepare the pan:

    • Preheat your oven to 325°F (160°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
  2. Cream butter and sugar:

    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add eggs and vanilla:

    • Beat in the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract and vanilla bean seeds until well combined.
  4. Add sour cream:

    • Mix in the sour cream until smooth and incorporated into the batter.
  5. Combine dry ingredients:

    • In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
  6. Mix wet and dry ingredients:

    • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  7. Bake the pound cake:

    • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
    • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Cool and serve:

    • Remove the pound cake from the oven and let it cool in the pan for about 10 minutes.
    • Then, transfer the cake to a wire rack to cool completely before slicing and serving.
  9. Optional: Glaze or frosting
