Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/2 cup sliced almonds
  • 4 strips of bacon, cooked crispy and crumbled
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions:

  1. Prepare a baking sheet:

    • Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. Cook the bacon:

    • In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet, drain on paper towels, and crumble into small pieces. Set aside.
  3. Combine sugar, corn syrup, and water:

    • In a medium saucepan, combine the granulated sugar, light corn syrup, and water. Stir over medium heat until the sugar dissolves.
  4. Cook the mixture:

    • Bring the mixture to a boil without stirring. Use a candy thermometer to monitor the temperature. Cook until the mixture reaches 300°F (hard crack stage), which should take about 10-15 minutes.
  5. Add almonds and bacon:

    • Once the mixture reaches 300°F, stir in the sliced almonds and crumbled bacon. Stir well to combine.
  6. Add vanilla and butter:

    • Remove the saucepan from the heat and stir in the vanilla extract and unsalted butter until melted and incorporated.
  7. Add baking soda:

    • Quickly sprinkle the baking soda over the mixture and stir it in. The mixture will foam up.
  8. Spread onto the baking sheet:

    • Immediately pour the hot brittle mixture onto the prepared baking sheet. Use a spatula or the back of a spoon to spread it out into an even layer.
  9. Cool and break into pieces:

    • Let the bacon almond brittle cool completely at room temperature until hardened, which should take about 30 minutes to 1 hour.
    • Once cooled and hardened, break the brittle into pieces using your hands or a knife.
  10. Serve and store:

    • Serve the bacon almond brittle as a delicious sweet and savory treat.
    • Store any leftover brittle in an airtight container at room temperature for up to 1 week.
