Grilled Peaches with Vanilla Syrup

Serves 4-8 2-4 Ripe Peaches, cut into halves from stem to bottom Olive Oil Vanilla Syrup 1 3/4 cups water1 1/2 cups granulated sugar1/2 cup packed light brown sugar1 1/2 teaspoons Villa Vainilla vanilla extract
In a medium saucepan over medium-high heat, whisk together water, and sugar. Bring to a boil and reduce heat. Simmer for about five minutes or until the sugar is completely dissolved. Remove from heat and stir in vanilla extract.
Cook peaches, cut side down, on a hot grill until fruit has grill marks, 3 to 4 minutes. Brush peach skin with olive oil, turn over, and move to indirect heat. Cover grill and cook until fruit is tender, about 8 to 10 minutes. Remove peaches from grill and allow to cool slightly. Then drizzle vanilla syrup over peaches and serve.
