Makes approx. 12 large pancakes
2 cups self-rising flour
2 tsp baking powder
1 cup buttermilk
2 tbsp vegetable oil
1 tsp Villa Vainilla vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg
Combine all ingredients in a large bowl with a spout (to make pouring easier) and mix until thoroughly combined. Preheat a large nonstick skillet on medium-low heat. Pour pancake batter into heated skillet. Cook about two minutes, then flip over to cook other side also about two minutes, or until both sides are golden brown. Serve with fruit, maple syrup, or whipped cream if desired.
