Fruit Salad with Lemon Coconut Dressing

For the fruit salad:

  • 2 cups strawberries, hulled and quartered
  • 2 cups pineapple chunks
  • 2 cups seedless grapes, halved
  • 2 bananas, sliced
  • 2 kiwis, peeled and diced
  • 1 cup blueberries
  • 1 cup raspberries
  • Optional: any other fruits you enjoy such as mango, papaya, or melon

For the lemon coconut dressing with vanilla:

  • 1/2 cup coconut milk
  • Zest and juice of 1 lemon
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt


  1. Prepare the fruit:

    • Wash and prepare all the fruits as needed. Cut them into bite-sized pieces and place them in a large mixing bowl.
  2. Make the dressing:

    • In a small bowl, whisk together the coconut milk, lemon zest, lemon juice, honey or maple syrup, vanilla extract, and a pinch of salt until well combined. Adjust sweetness and tanginess to taste by adding more honey or lemon juice if desired.
  3. Combine fruit and dressing:

    • Pour the lemon coconut dressing over the prepared fruit in the mixing bowl.
  4. Toss gently:

    • Gently toss the fruit salad with the dressing until all the fruits are evenly coated.
  5. Chill:

    • Cover the fruit salad with plastic wrap or transfer it to an airtight container.
    • Refrigerate the fruit salad for at least 30 minutes to allow the flavors to meld and the salad to chill.
  6. Serve:

    • Once chilled, give the fruit salad a final gentle toss before serving.
    • Serve the fruit salad in individual bowls or on a platter.
    • Garnish with additional lemon zest or shredded coconut if desired.
